  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
Ganache Topping
  • 1 cup chocolate for ganache
  • 1/2 cup heavy cream for ganache
  • Colored sprinkles for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the chocolate chips.
Baking
  1. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Topping
  1. Once cooled, top each cookie with a dollop of silky ganache frosting (made by heating chocolate and heavy cream together) and sprinkle with colored sprinkles.

Notes

Chill your dough for about 30 minutes for a thicker cookie. Experiment with mix-ins like nuts or peanut butter chips for a fun twist.
