Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In another bowl, sift together the all-purpose flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chocolate chips.
Baking
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Topping
- Once cooled, top each cookie with a dollop of silky ganache frosting (made by heating chocolate and heavy cream together) and sprinkle with colored sprinkles.
Notes
Chill your dough for about 30 minutes for a thicker cookie. Experiment with mix-ins like nuts or peanut butter chips for a fun twist.
