Salad Base
  • 3 cups sweet peas Can use frozen, thawed
  • 6 slices bacon Cooked until crispy and crumbled
  • 1 cup cheddar cheese, diced Feel free to swap with gouda or pepper jack
  • 1/2 cup onion, chopped Red or yellow onion works well
Dressing
  • 1 tablespoon sugar Adds a touch of sweetness
  • 3 tablespoons white vinegar Adjust to taste for tanginess
  • 1/2 teaspoon salt To taste
  • 1/4 teaspoon pepper Freshly ground is best

Method
 

Preparation
  1. Cook the bacon until crispy and crumble it into pieces.
  2. In a large bowl, combine sweet peas, crumbled bacon, diced cheddar cheese, and chopped onion.
Make the Dressing
  1. In a separate small bowl, whisk together sugar, white vinegar, salt, and pepper to create the dressing.
  2. Pour the dressing over the pea mixture and stir to combine.
Chill and Serve
  1. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad is best served cold and can be stored in the fridge for up to 3 days. For a vegan option, replace bacon with smoked tempeh and use plant-based cheese.
