Ingredients
  

For the Crust
  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
For the Filling
  • 1 cup granulated sugar
  • 4 8-ounce packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 1 zest of 1 lemon
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs with the melted butter and press this mixture into the bottom of a 9-inch springform pan.
Filling
  1. In a separate bowl, beat the cream cheese with the sugar until creamy. Add the vanilla extract, lemon juice, and zest, mixing well.
  2. Add the eggs one at a time, ensuring each is well incorporated before adding the next.
  3. Blend in the sour cream and flour until smooth.
Baking
  1. Pour the cheesecake mixture over the crumb crust and smooth the top.
  2. Bake for about 60 minutes or until the center is slightly jiggle-y.
  3. Turn off the oven and leave the cheesecake inside for an hour to help prevent cracks.
  4. Allow to cool to room temperature, then chill in the refrigerator for at least 4 hours before serving.

Notes

For extra creaminess, consider using a water bath when baking. Let your cream cheese and eggs sit at room temperature for better incorporation.
