Ingredients
  

For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
For the cheesecake filling
  • 4 packages (8 oz each) cream cheese, softened
  • 1 1/4 cups sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream

Method
 

Preparation
  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan to form a crust.
Making the filling
  1. In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
  2. Add eggs one at a time, mixing on low speed until just incorporated.
  3. Pour the cream cheese mixture over the crust in the springform pan.
Baking
  1. Bake for 50-60 minutes or until the center is set and the edges are lightly browned.
  2. Remove from oven and let cool.
  3. Once cooled, add sour cream on top and refrigerate for at least 4 hours before serving.

Notes

For an extra special touch, add a bit of lemon zest to the cream cheese mixture. Consider using a water bath while baking to prevent cracks and ensure even cooking. If you prefer a lighter texture, fold in a couple of whipped egg whites at the end.
