- Cut the hard-boiled eggs in half lengthwise.
- Remove the yolks and place them in a mixing bowl.
- Mash the yolks with a fork until crumbly.
- Add mayonnaise, mustard, salt, and pepper to the yolks and mix until smooth.
- Spoon or pipe the yolk mixture back into the egg whites.
- Sprinkle with paprika for garnish. Serve chilled.
Notes
To avoid greenish yolks, cool the eggs in an ice bath immediately after boiling. You can prepare the egg filling and store it separately in the fridge. Assemble them right before serving. For a lighter version, swap the mayo for Greek yogurt.
