Main Ingredients
  • 3 pieces ripe bananas Bananas should be very ripe for best flavor.
  • 1/3 cup melted butter
  • 1 tsp baking soda
  • a pinch salt
  • 3/4 cup sugar Can substitute with brown sugar or honey.
  • 1 large egg, beaten For a vegan version, replace with 1/4 cup of applesauce or a flax egg.
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 4x8 inch loaf pan.
  3. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  4. Stir in the melted butter.
  5. Mix in the baking soda and salt.
  6. Stir in the sugar, beaten egg, and vanilla extract.
  7. Mix in the flour until just incorporated.
  8. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 60-65 minutes or until a toothpick inserted comes out clean.
  2. Let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

Serve with a pat of butter, drizzle of honey, or sprinkle of cinnamon. Store in an airtight container at room temperature for 3-4 days, or in the fridge for up to a week. The bread freezes well for up to 3 months.
