Cinnamon Swirl Zucchini Bread

Ingredients
  

Wet Ingredients
  • 1 cup zucchini (finely shredded) Make sure to squeeze out excess moisture.
  • 2 pieces eggs May substitute with flax eggs for a vegan option.
  • 1/2 cup vegetable oil Can replace half with applesauce for a lighter version.
  • 1/2 cup plain Greek yogurt Adds moisture to the bread.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 cup granulated sugar (for the swirl)
  • 1 Tablespoon cinnamon (for the swirl)

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Line a 9x5 loaf pan with parchment paper, securing it with binder clips.
  3. In a large bowl, combine the zucchini, eggs, oil, yogurt, and vanilla. Mix until well incorporated.
  4. In a separate bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves.
  5. Gradually sift the dry ingredients into the wet mixture, stirring just until combined. Do not overmix.
  6. In a small bowl, mix the cinnamon and sugar for the swirl.
Baking
  1. Pour half of the batter into your prepared pan and sprinkle half of the cinnamon-sugar mixture on top.
  2. Spread the remaining batter over the top and add the rest of the cinnamon sugar.
  3. Use a knife to swirl it up and down, side to side, to create a marbled effect.
  4. Bake for 60-65 minutes, until golden brown. Check with a toothpick; if it comes out clean, it's done.
  5. Cool in the pan for 10-15 minutes before slicing.

Notes

Serve warm with butter or cream cheese. Store in an airtight container for 3-4 days or freeze for up to 3 months.
