  • 1/3 cup unsalted melted butter
  • 1 tsp baking soda
  • 0.125 tsp salt
  • 3/4 cup granulated sugar Brown sugar can be substituted for deeper flavor.
  • 1 large egg Can be substituted with a flax egg for vegan option.
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour Can be substituted with whole wheat flour for a healthier option.
Cinnamon swirl mixture
  • 1 tbsp ground cinnamon For an extra touch, you can add nutmeg.
  • 1/4 cup brown sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter until well combined.
  4. Mix in the baking soda and salt.
  5. Add the sugar, beaten egg, and vanilla extract, stirring until smooth.
  6. Gradually add the all-purpose flour to the banana mixture, stirring until just combined, being careful not to overmix.
  7. In a separate small bowl, combine the ground cinnamon and brown sugar.
Assembly and Cooking
  1. Pour half of the banana bread batter into the loaf pan and sprinkle half of the cinnamon swirl mixture over it.
  2. Pour the remaining banana batter on top and sprinkle the remaining cinnamon swirl mixture.
  3. Gently swirl the batter with a knife or skewer.
  4. Bake for 60-65 minutes, or until a toothpick comes out clean.
  5. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For serving, warm slices topped with butter are perfect. Try adding a drizzle of honey or powdered sugar for an elegant touch. Store in an airtight container for 3-4 days, or freeze for up to three months.
