Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter until well combined.
- Mix in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract, stirring until smooth.
- Gradually add the all-purpose flour to the banana mixture, stirring until just combined, being careful not to overmix.
- In a separate small bowl, combine the ground cinnamon and brown sugar.
Assembly and Cooking
- Pour half of the banana bread batter into the loaf pan and sprinkle half of the cinnamon swirl mixture over it.
- Pour the remaining banana batter on top and sprinkle the remaining cinnamon swirl mixture.
- Gently swirl the batter with a knife or skewer.
- Bake for 60-65 minutes, or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For serving, warm slices topped with butter are perfect. Try adding a drizzle of honey or powdered sugar for an elegant touch. Store in an airtight container for 3-4 days, or freeze for up to three months.
