Ingredients
  

Main Ingredients
  • 3 pieces ripe bananas, mashed Use overripe bananas for maximum sweetness.
  • 1/3 cup melted butter Can use a plant-based alternative for vegan version.
  • 1 teaspoon baking soda
  • a pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten Can substitute with 1/4 cup applesauce or flaxseed meal mixed with water.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
Cinnamon Filling
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
Glaze
  • 1 cup powdered sugar
  • 2-3 tablespoons milk Adjust for desired consistency.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a mixing bowl, combine the mashed bananas with the melted butter.
  3. Stir in baking soda and a pinch of salt.
  4. Add sugar, egg, and vanilla extract, mixing until well combined.
  5. Gradually add the flour, mixing just until incorporated. Don’t overmix!
Cinnamon Filling
  1. In a separate bowl, combine cinnamon and brown sugar.
Assembly and Baking
  1. Pour half of the banana bread batter into the prepared loaf pan.
  2. Sprinkle half of the cinnamon filling over the batter.
  3. Add the remaining batter on top, then sprinkle the rest of the cinnamon filling.
  4. Use a knife to gently swirl the filling into the batter.
  5. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow to cool in the pan for 10 minutes, then transfer to a wire rack.
Glazing
  1. For the glaze, whisk together powdered sugar and milk until smooth, then drizzle over the cooled banana bread.

Notes

Serve this banana bread warm. Pair it with coffee or milk. Store leftovers in the fridge for up to a week or freeze for up to 3 months. Reheat in the microwave before serving.
