  • 1 teaspoon cinnamon Adjust to taste.
  • 2 tablespoons maple syrup (optional) Adds sweetness; can substitute with honey or agave.
  • 1/4 cup chopped nuts (e.g., walnuts or pecans) Optional, can substitute with seeds.
  • 1/4 cup raisins or dried cranberries (optional) For extra sweetness.

Method
 

Preparation
  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and almond milk. Bring to a boil, then reduce to a simmer.
  3. Cover and cook for about 15 minutes or until quinoa is fluffy and the liquid is absorbed.
Cooking
  1. Stir in diced apple, cinnamon, maple syrup, and chopped nuts.
  2. Cook for an additional 5 minutes until the apple softens.
  3. Serve warm, topped with raisins or additional nuts if desired.

Notes

Store leftovers in the fridge for up to 3 days or freeze for about a month. Reheat in the microwave with a splash of almond milk for extra creaminess. Add a pinch of salt before cooking to enhance flavors.
