  • 1 cup grated zucchini Use fresh zucchini for best flavor.
  • 1 cup sugar or sugar alternative Adjust sweetness to taste.
  • ½ cup vegetable oil or coconut oil Coconut oil adds a hint of flavor.
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour Can substitute half with whole wheat flour.
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup chocolate chips Dark chocolate chips can be used for a richer flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large bowl, combine grated zucchini, sugar, oil, eggs, and vanilla. Mix until well combined.
  3. In another bowl, sift together flour, cocoa powder, baking soda, and salt.
  4. Gradually stir dry ingredients into wet mixture until just combined, being careful not to overmix.
  5. Fold in the chocolate chips.
  6. Pour batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Cool the bread in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a delightful crunch, consider adding walnuts or pecans. Microwaving a slice for 15-20 seconds creates the perfect warm treat.
