Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder For a richer flavor, consider using dark chocolate cocoa powder.
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil Can be substituted with applesauce for a healthier option.
  • 2 large eggs Can be substituted with flaxseed meal for a vegan option.
  • 1 tsp vanilla extract
  • 1 cup grated zucchini Can be substituted with grated carrots.
  • 1/2 cup chocolate chips Optional, but highly recommended.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9 x 5 inch loaf pan.
  2. In a bowl, mix the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Stir in the grated zucchini.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in chocolate chips if using.
Baking
  1. Pour the batter into the prepared loaf pan and spread it evenly.
  2. Bake for about 50-60 minutes or until a toothpick comes out clean.
  3. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Slices are delightful when served warm with butter or cream cheese. Store in an airtight container at room temperature for 3-4 days or freeze for up to 3 months. Reheat in the microwave for a cozy treat.
