Preparation
- Preheat your oven to 350° F and spray a 5×9 loaf pan with non-stick spray. Set it aside.
- In a medium mixing bowl, whisk together the dry ingredients: cocoa powder, flour, baking soda, baking powder, salt, and cinnamon. Set aside.
Mixing
- In a large mixing bowl, mix together the vegetable oil, vanilla, and both sugars.
- Stir in the eggs, bananas, and shredded zucchini until well combined.
- Fold in the dry ingredients just until everything is combined. Don’t overdo it!
- Gently fold in the chocolate chips.
Baking
- Pour the batter into your prepared loaf pan and bake for 45 to 60 minutes, until a toothpick comes out clean with a few moist crumbs sticking to it.
- Once baked, remove from oven and let it cool completely before slicing and serving.
Notes
Enjoy warm with butter, or top with whipped cream and fresh berries for dessert. Store in an airtight container at room temperature for up to 4 days, or freeze individual slices for long-term storage. Reheat in the microwave for about 15 seconds as needed.
