  • 1 cup unsalted butter Melted
  • 8 oz dark chocolate, chopped Use high-quality for best flavor
  • 2 cups sugar Can substitute with coconut sugar for a healthier option
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour Can substitute with gluten-free flour
  • 1/2 cup cocoa powder
  • 1/2 tsp salt
  • 1 cup fresh or frozen raspberries If using frozen, do not thaw

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. Melt the butter and dark chocolate together in a saucepan over low heat, stirring until smooth.
  3. Remove from heat and stir in sugar.
  4. Beat in eggs, one at a time, then stir in vanilla.
  5. Combine flour, cocoa powder, and salt in a separate bowl; gradually mix into the chocolate mixture until just blended.
  6. Gently fold in the raspberries.
  7. Pour batter into the prepared pan and smooth the top.
Baking
  1. Bake for about 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  2. Let cool before cutting into squares and serving.

Notes

For serving, dust the tops with powdered sugar or drizzle white chocolate over them. Store in an airtight container at room temperature for up to three days, or freeze for up to three months. Reheat in the microwave for gooey goodness.
