Ingredients
  

Wet Ingredients
  • 1 cup softened, unsalted butter
  • 1 cup white granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs at room temperature
  • 2 teaspoons vanilla extract
  • 2 tablespoons milk additional if needed, up to 1/4 cup total
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup unsweetened natural cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon optional espresso powder for an extra kick
Chocolate Chips and Garnish
  • 2 cups semi-sweet chocolate chips used in portions
  • optional sea salt for garnish

Method
 

Preparation
  1. In a large mixing bowl, cream together the softened butter, white sugar, and brown sugar for about 3 minutes until it’s light and fluffy.
  2. Add the eggs, one at a time, allowing each to fully incorporate before adding the next. Mix in the vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, salt, and optional espresso powder.
  4. Gradually blend the dry ingredients into the wet mixture. Add enough milk to create a dough that’s soft yet firm, not sticky.
  5. Fold in 1 ½ cups of semi-sweet chocolate chips.
  6. With lightly floured hands, form the dough into 1.5-inch balls and place them on a parchment-lined baking sheet.
  7. Chill in the refrigerator for at least 30 minutes.
Baking
  1. Preheat your oven to 350°F (175°C). Before baking, press a few reserved chocolate chips into the top of each cookie.
  2. Bake for 10-12 minutes until the edges are set but the centers remain soft and gooey.
  3. Cool on the baking sheet for about 5 minutes before transferring to a wire rack. Optionally, sprinkle with sea salt.

Notes

These cookies are best served warm. For storage, keep in an airtight container at room temperature for up to a week or freeze for up to three months. Reheat in the microwave for a few seconds to restore gooeyness.
