  • 200 grams mung bean noodles Soaked in warm water before cooking.
  • 2 tablespoons vegetable oil For sautéing.
  • 2 cloves garlic Minced.
  • 1 large bell pepper Sliced.
  • 1 large carrot Sliced.
  • 1 cup broccoli Cut into florets.
  • 3 tablespoons soy sauce For flavor.
  • 1 tablespoon sesame oil For added flavor.
  • 2 stalks green onions Chopped for garnish.
  • to taste salt For seasoning.
  • to taste pepper For seasoning.

Method
 

Preparation
  1. Soak the mung bean noodles in warm water for 20 minutes until soft. Drain and set aside.
  2. Heat vegetable oil in a pan over medium heat. Add minced garlic and sauté until fragrant.
Cooking
  1. Add sliced bell pepper, carrot, and broccoli, stir-frying until just tender.
  2. Add the soaked noodles to the pan, pouring in soy sauce and sesame oil. Toss everything together until well combined.
  3. Season with salt and pepper to taste.
  4. Garnish with chopped green onions before serving.

Notes

Serve in a vibrant bowl, garnished with extra green onions and sesame seeds. Pair with spring rolls or cucumber salad for a delightful meal. Store leftovers in the fridge for about 3 days or freeze for up to a month.
