Preparation
- Preheat your oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté the mushrooms until soft. Season with salt and pepper.
- Brush the chicken breasts with Dijon mustard and season with salt and pepper.
- On a floured surface, roll out the puff pastry and place the sautéed mushroom mix followed by a chicken breast in the center of each pastry sheet.
- Fold the pastry over the chicken and seal the edges, then brush with egg wash.
Cooking
- Place the wrapped chicken on a baking sheet and bake for 25-30 minutes or until golden brown.
- Meanwhile, in a saucepan, heat the heavy cream and season with salt and pepper.
- Serve the chicken Wellington hot, drizzled with Dijon cream sauce.
Notes
Make sure to seal the edges well to avoid any pastry leaks. This dish keeps well in the fridge for about 3 days, and can be frozen for up to 3 months if wrapped tightly.
