  • 1 cup eggplant, sliced
  • 1 cup prosciutto, thinly sliced
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup marinara sauce
  • 1/4 cup olive oil
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a skillet, heat olive oil over medium heat and cook the chicken until golden on both sides, about 4-5 minutes per side.
  4. Remove the chicken from the skillet and layer each breast with eggplant slices, prosciutto, and mozzarella cheese.
  5. Place the layered chicken in a baking dish and spoon marinara sauce over the top.
  6. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Garnish with fresh basil before serving.
