Ingredients
  

For the Chicken
  • 4 pieces chicken breasts Boneless is preferred
  • 2 tablespoons olive oil For cooking
  • 1 medium onion, chopped For flavor
  • 3 cloves garlic, minced To enhance flavor
  • 1 can (14 oz) crushed tomatoes Base for the sauce
  • 1 teaspoon dried oregano For seasoning
  • 1 teaspoon dried basil For flavor
  • 1/2 teaspoon salt To taste
  • 1/4 teaspoon black pepper To taste
  • 1/2 cup mozzarella cheese, shredded For topping
  • to taste fresh basil leaves For garnish

Method
 

Cooking the Chicken
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until softened.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the crushed tomatoes, oregano, basil, salt, and pepper. Bring to a simmer.
  5. Season the chicken breasts with salt and pepper and add them to the skillet.
  6. Cover and cook for about 20 minutes, or until the chicken is cooked through.
  7. Sprinkle mozzarella cheese on top of the chicken, cover, and let it melt.
  8. Garnish with fresh basil leaves before serving.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to three months. For deeper flavor, let the sauce simmer longer.
