  • 1 pound shredded chicken Rotisserie chicken works great for a quicker option.
  • 1 package gnocchi Frozen gnocchi can also be used.
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream Can substitute with half-and-half for a lighter option.
  • 2 cups spinach
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion chopped
  • 3 cloves garlic, minced Toasting the garlic lightly can enhance the flavor.
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large pot, sauté onion, garlic, carrots, and celery over medium heat until softened.
  2. Add the shredded chicken and broth, then bring to a simmer.
  3. Stir in the gnocchi and cook according to package instructions.
  4. Reduce heat and stir in heavy cream and spinach.
  5. Season with thyme, basil, salt, and pepper.
  6. Cook until the spinach wilts and the soup is heated through.
  7. Serve hot, and enjoy!

Notes

This soup can be stored in an airtight container in the fridge for 3-4 days, or frozen for up to 3 months. Reheat gently on the stove, adding a splash of broth if too thick.
