  • 1 piece bell pepper (any color), sliced
  • 1 piece onion, sliced
  • 2 tablespoons fajita seasoning
  • 1 tablespoon olive oil

  • Cooked rice or quinoa Base for the bowls.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken, bell pepper, onion, olive oil, fajita seasoning, salt, and pepper. Toss until everything is well-coated.
  3. Spread the mixture onto a baking sheet.
Cooking
  1. Bake for 20-25 minutes, or until the chicken is cooked through.
  2. In your meal prep bowls, divide the cooked rice or quinoa, then top with the chicken and vegetable mixture.
  3. Add salsa and avocado if desired.

Notes

Store in the refrigerator for up to 4-5 days, or freeze for up to 3 months. Reheat in the microwave for 2-3 minutes.
