Ingredients
  

Crust
  • 1.5 cups 1 ½ cups graham cracker crumbs
  • 0.5 cups ½ cup unsalted butter, melted
  • 0.25 cups ¼ cup sugar
Filling
  • 2 packages 2 (8 oz) packages cream cheese, softened Bring to room temperature for best results.
  • 1 cups 1 cup powdered sugar
  • 1 cups 1 cup sour cream Greek yogurt can be used as a substitute.
  • 1 teaspoon 1 teaspoon vanilla extract
  • 3 large 3 large eggs Bring to room temperature.
Topping
  • 2 cups 2 cups fresh or canned cherries
  • 0.5 cups ½ cup cherry pie filling (optional) Can be added for extra sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press this mixture into the bottom of a springform pan.
Filling
  1. Beat the cream cheese and powdered sugar until smooth.
  2. Add sour cream, vanilla, and eggs. Mix until everything is well-combined.
Baking
  1. Pour the filling into the crust and bake for about 50-60 minutes. The center should be slightly jiggly.
  2. Let it cool in the pan for at least an hour before transferring it to the refrigerator to chill for four hours or overnight.
Topping and Serving
  1. Once chilled, spread the cherries (and cherry pie filling if desired) over the top before serving.

Notes

Room temperature ingredients help prevent lumps in the filling. For variations, experiment with different fruits or make it vegan with plant-based cream cheese and flax eggs. This cheesecake can be made ahead of time and even frozen.
