Cherry Amaretto Tiramisu

Ingredients
  

For the Tiramisu
  • 2 cups mascarpone cheese Softened for easy mixing
  • 1 cup heavy cream Whipped to stiff peaks
  • 1/2 cup powdered sugar For sweetness
  • 1 cup cherry juice For dipping ladyfingers
  • 1/2 cup amaretto liqueur For flavor
  • 24 pieces ladyfinger cookies
  • 1 cup fresh cherries, pitted and halved For layering and garnish
  • to taste Cocoa powder For dusting on top

Method
 

Preparation
  1. In a bowl, whip the heavy cream until stiff peaks form.
  2. In another bowl, mix mascarpone cheese and powdered sugar until smooth.
  3. Gently fold the whipped cream into the mascarpone mixture.
  4. In a shallow dish, combine cherry juice and amaretto. Dip each ladyfinger in the mixture briefly, then layer them in a serving dish.
  5. Spread a layer of the mascarpone mixture over the ladyfingers, then add a layer of fresh cherries. Repeat the layers until all ingredients are used, finishing with the mascarpone mixture on top.
  6. Cover and refrigerate for at least 4 hours or overnight.
Serving
  1. Before serving, dust the top with cocoa powder and garnish with additional cherries.

Notes

For the best flavor, allow the tiramisu to chill overnight. Don't rush the chilling time! You can also swap out mascarpone for coconut cream for a vegan alternative, and mix different liqueurs for varied flavors.
