  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice) Different cheeses can be used based on preference.
  • 1/2 cup milk Room temperature recommended.
  • 1/4 cup butter, melted Ensure butter is melted for smooth mixing.
  • 2 large eggs
  • 1/4 cup chopped green onions (optional) Can be replaced with sautéed garlic.
  • 1 cup flour
  • 1 teaspoon baking powder

Preparation
  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, combine mashed potatoes, shredded cheese, milk, melted butter, eggs, and green onions (if using). Mix until well combined.
  3. In another bowl, whisk together flour, baking powder, salt, and pepper.
  4. Gradually add the dry ingredients to the potato mixture and stir until just combined.
  5. Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes or until golden and set.
  7. Allow them to cool slightly before serving.

Notes

Serve warm for best flavor. Store in an airtight container in the fridge for up to a week or freeze for about 3 months. Reheat before serving.
