  • 1 pound ground beef
  • 1 cup uncooked pasta (such as elbow macaroni)
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder Adds depth of flavor
  • 1 tablespoon olive oil For cooking onions

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and cook the chopped onions until translucent.
  3. Add the ground beef, breaking it apart while cooking until browned. Drain excess fat if necessary.
  4. Stir in the diced tomatoes, beef broth, garlic powder, salt, and pepper.
  5. Add the uncooked pasta and bring to a simmer. Cover and cook for about 10-12 minutes, or until pasta is tender.
  6. Stir in half of the shredded cheese until melted.
  7. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  8. Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.

Notes

Serve with fresh herbs, a green salad, or garlic bread. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
