  • 1 lb ground turkey Can be substituted with chicken or beef
  • 2 cups shredded cheese (cheddar or mozzarella) Feel free to mix different cheeses
  • 1 cup heavy cream or sour cream For a lighter version, consider Greek yogurt
  • 1 cup diced tomatoes (canned or fresh) Use whatever you have on hand
  • 1 cup chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Toasting will enhance its flavor
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper Adjust to your preference
  • Olive oil for cooking Use as needed

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened.
  4. Add ground turkey, breaking it apart as it cooks until browned and cooked through.
  5. Stir in diced tomatoes, chicken broth, heavy cream, and Italian seasoning. Season with salt and pepper.
  6. Combine the cooked pasta with the turkey mixture, then stir in 1 1/2 cups of cheese.
  7. Pour the mixture into a baking dish, topping with the remaining cheese.
  8. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  9. Let it cool slightly before serving. Enjoy your comforting casserole!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3-4 days. For longer storage, freeze in a freezer-safe dish for 2-3 months. Reheating can be done in the oven or microwave.
