Ingredients
  

Seafood Filling
  • 1 lb seafood mix (shrimp, crab, scallops) You can use fresh or frozen seafood.
  • 1 cup heavy cream For a lighter version, use light cream or milk.
  • 1/2 cup chicken or seafood broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1/4 cup onion, diced
  • 2 cloves garlic, minced Toast the garlic for added flavor.
  • 1 tsp Old Bay seasoning Add more for extra flavor.
  • to taste Salt and pepper
For the Topping
  • 1 package Cheddar Bay Biscuits mix Prepare according to package instructions.
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped (for garnish)

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, sauté onion and garlic until fragrant.
  3. Add seafood mix and cook until slightly opaque.
  4. Stir in mixed vegetables, heavy cream, broth, Old Bay seasoning, salt, and pepper.
  5. Simmer for 5-7 minutes until thickened.
  6. Pour the seafood mixture into a greased baking dish.
Baking
  1. Prepare Cheddar Bay Biscuits according to package instructions.
  2. Spoon biscuit dough over the seafood mixture.
  3. Sprinkle cheddar cheese on top.
  4. Bake for 25-30 minutes or until biscuits are golden brown.
  5. Garnish with green onions before serving.

Notes

This dish keeps well in the fridge for about 3 days. It can also be frozen for later use. For a vegan option, swap in a plant-based seafood alternative and use coconut cream.
