Ingredients
  

Wet Ingredients
  • 1 cup applesauce unsweetened for best results
  • 1/2 cup vegetable oil
  • 3 large eggs room temperature
  • 1 cup sugar can substitute with honey or maple syrup
  • 1 tsp vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour can substitute with gluten-free blend
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
Fruits and Vegetables
  • 1 cup grated carrots finely grated
  • 1 cup grated zucchini finely grated

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together the eggs, sugar, applesauce, and vegetable oil until well combined.
  3. Add the grated carrots and zucchini, mixing thoroughly.
  4. In another bowl, mix the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared loaf pan.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow to cool for 10 minutes before transferring to a wire rack to cool completely.

Notes

Grate veggies finely to blend into the batter. Freeze slices for up to 3 months and reheat in the microwave. Variations include removing eggs for vegan options or adding chocolate chips for extra sweetness.
