  • 3 medium medium beets, peeled and diced
  • 4 large large carrots, peeled and sliced
Seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar or maple syrup Choose your preferred sweetener.
  • Salt and pepper to taste
  • Fresh herbs (like thyme or rosemary) for garnish Optional, for serving.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced beets and sliced carrots.
  3. Drizzle with olive oil, then sprinkle with brown sugar, salt, and pepper. Toss until all the veggies are evenly coated.
Roasting
  1. Spread the mixture in a single layer on a baking sheet lined with parchment paper.
  2. Roast in the preheated oven for about 25-30 minutes, turning halfway through, until the vegetables are tender and caramelized.
  3. Remove from oven and let cool slightly.
  4. Garnish with fresh herbs before serving.

Notes

Store leftovers in the refrigerator for up to a week in an airtight container. Reheat in the oven for best results, but a microwave works in a pinch. For variations, try adding balsamic vinegar or crumbled feta cheese before serving.
