  • 6 pieces 6 eggs Large eggs
  • 1 cup 1 cup milk Whole milk recommended
  • 1 cup 1 cup mozzarella cheese, shredded Fresh mozzarella can be used
  • 1 cup 1 cup cherry tomatoes, halved Ripe for sweetness
  • 1/2 cup 1/2 cup fresh basil, chopped Fresh basil enhances flavor
  • to taste Salt and pepper to taste
  • for drizzling tablespoons Olive oil Adds flavor and prevents sticking

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Place the pie crust in a pie dish and set aside.
  3. In a large bowl, whisk together the eggs and milk until well combined.
  4. Stir in the mozzarella cheese, cherry tomatoes, and basil. Season with salt and pepper.
  5. Pour the egg mixture into the pie crust.
  6. Drizzle with olive oil.
Baking
  1. Bake for 35-40 minutes or until the quiche is set and a light golden color.
  2. Let cool slightly before slicing. Enjoy warm or at room temperature.

Notes

Serve with a green salad or roasted veggies. Leftovers can be stored in the fridge for 3-4 days, or frozen for up to 2 months.
