Ingredients
  

For the Grits
  • 1 cup grits
  • 4 cups water or chicken broth
  • 4 tablespoons butter Used in both the grits and shrimp
  • 1 cup shredded cheddar cheese For added creaminess and flavor
  • Salt and pepper to taste Salt and pepper
For the Shrimp
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 2 cloves garlic, minced
  • 1/2 cup green onions, chopped For garnish

Method
 

Cooking the Grits
  1. In a pot, bring the water or chicken broth to a boil.
  2. Stir in the grits and reduce heat to low. Cook for about 20-25 minutes until thickened, stirring occasionally.
  3. Stir in butter and cheddar cheese until melted and smooth. Season with salt and pepper.
Cooking the Shrimp
  1. In a skillet, melt a tablespoon of butter over medium heat.
  2. Add garlic and sauté for 1 minute.
  3. Add the shrimp and Cajun seasoning, cooking until shrimp are pink and cooked through, about 3-4 minutes.
Serving
  1. Serve the shrimp over a bed of creamy grits and garnish with chopped green onions.

Notes

To store leftovers, keep in an airtight container in the fridge for up to 3 days. For longer storage, freeze the shrimp and grits separately for up to 3 months, reheating with a splash of broth or milk.
