Method
Cooking the Grits
- In a pot, bring the water or chicken broth to a boil.
- Stir in the grits and reduce heat to low. Cook for about 20-25 minutes until thickened, stirring occasionally.
- Stir in butter and cheddar cheese until melted and smooth. Season with salt and pepper.
Cooking the Shrimp
- In a skillet, melt a tablespoon of butter over medium heat.
- Add garlic and sauté for 1 minute.
- Add the shrimp and Cajun seasoning, cooking until shrimp are pink and cooked through, about 3-4 minutes.
Serving
- Serve the shrimp over a bed of creamy grits and garnish with chopped green onions.
Notes
To store leftovers, keep in an airtight container in the fridge for up to 3 days. For longer storage, freeze the shrimp and grits separately for up to 3 months, reheating with a splash of broth or milk.
