  • 2 tablespoons olive oil For sautéing the vegetables.
  • 1 medium bell pepper, diced Adds color and sweetness.
  • 1 medium onion, diced A base for flavor.
  • 2 cloves garlic, minced Brings in rich flavor.
  • 1 cup diced tomatoes Add at the end to create a light sauce.
  • Salt and pepper to taste Adjust based on preference.

Method
 

Cooking Instructions
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced onion and bell pepper; cook until softened, about 5 minutes.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the shrimp and Cajun seasoning, stirring to coat.
  5. Cook until shrimp is pink and opaque, about 5-6 minutes.
  6. Add the diced tomatoes and simmer for another 2-3 minutes.
  7. Season with salt and pepper.
  8. Serve hot over cooked white rice.
