  • 1 lb Cajun sausage Feel free to substitute with other types of sausage.
  • 2 medium Bell peppers Any color of bell peppers can be used.
  • 1 medium Zucchini
  • 1 medium Onion Yellow or red onion works best.
  • 2 tbsp Olive oil Used for sautéing.
  • 2 tbsp Cajun seasoning Adjust according to heat preference.
  • 1 tsp Salt To taste.
  • 1 tsp Pepper To taste.

Method
 

Preparation
  1. Slice the sausage and vegetables.
  2. In a large skillet, heat olive oil over medium heat.
Cooking
  1. Add the sausage and cook until browned.
  2. Add the sliced vegetables to the skillet.
  3. Sprinkle with Cajun seasoning, salt, and pepper.
  4. Stir-fry for about 10-15 minutes until vegetables are tender.
  5. Serve warm or allow to cool and store for meal prep.

Notes

Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months in an airtight container. To reheat, use the microwave or skillet.
