  • 1 pound ground chicken Substitutable with ground turkey or beef.
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tablespoon Cajun seasoning Adjust to taste for spice level.
  • 1 cup diced tomatoes Canned or fresh.
  • 1 tablespoon Worcestershire sauce
  • to taste Salt and pepper
For Serving
  • 4 brioche buns Can substitute with other types of buns.
  • 1 cup shredded cheddar cheese Other cheese options like pepper jack or Monterey Jack are also good.
  • 1/2 cup milk
  • 1 tablespoon butter

Method
 

Cooking Preparation
  1. In a large skillet over medium heat, add the ground chicken, onion, garlic, and bell pepper. Cook until the chicken is browned and the vegetables are softened, about 5-7 minutes.
  2. Stir in the Cajun seasoning, diced tomatoes, Worcestershire sauce, salt, and pepper. Simmer for about 10 minutes until heated through and slightly thickened.
Cheese Sauce Preparation
  1. While the chicken mixture is simmering, prepare the cheese sauce. In a small saucepan over low heat, melt the butter, then whisk in the milk. Gradually add the cheddar cheese, stirring until melted and smooth.
Assembly
  1. Toast the brioche buns until golden.
  2. To assemble, spoon the Cajun chicken mixture onto the bottom half of each bun, drizzle with cheddar cheese sauce, and top with the other half of the bun. Serve immediately.

Notes

Leftovers keep well in the fridge for about 3-4 days and can be frozen for up to 3 months. Reheat before serving. Adjust Cajun seasoning and try adding extra veggies for additional nutrients.
