For the Sloppy Joe Mix
  • 1 lb ground chicken
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • 1 cup diced tomatoes
  • 1/2 cup chicken broth
  • 4 pieces hamburger buns

Method
 

Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and bell pepper, cooking until soft.
  3. Stir in minced garlic and cook for another minute.
  4. Add ground chicken to the skillet, breaking it apart with a spoon. Cook until browned.
  5. Mix in Cajun seasoning, diced tomatoes, and chicken broth. Bring to a simmer and let cook for about 10-15 minutes until slightly thickened.
  6. Season with salt and pepper to taste.
  7. Serve the mixture on hamburger buns.

Notes

For a spicier kick, add a pinch of cayenne pepper to the mix. You can swap out ground chicken for ground turkey or beef if you prefer. For variations, try using jackfruit or chickpeas for a vegan option or add cheddar cheese for an extra cheesy layer.
