Ingredients
  

For the brownie layer
  • 1 box brownie mix
  • 2 large eggs
  • 1/3 cup vegetable oil
For the cheesecake layer
  • 1 package cream cheese (8 oz), softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
For the cookie dough layer
  • 1 cup chocolate chip cookie dough (store-bought or homemade)
  • 1/2 cup chocolate chips (optional) Sprinkle on top before the final bake

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a bowl, prepare the brownie mix according to package instructions and pour it into the prepared baking dish.
  3. Bake for 20-25 minutes or until a toothpick comes out clean.
  4. In another bowl, combine softened cream cheese, granulated sugar, and vanilla extract, mixing until smooth.
  5. Spread the cream cheese mixture over the baked brownie layer.
  6. Drop spoonfuls of chocolate chip cookie dough over the cheesecake layer and spread it gently.
  7. If desired, sprinkle chocolate chips on top.
  8. Bake again for 25-30 minutes until the top is golden.
  9. Allow to cool, then cut into bars and serve.

Notes

Avoid over-mixing the cream cheese mixture to keep it fluffy. Let the cream cheese come to room temperature for easier blending. Allowing the bars to cool before slicing makes for cleaner cuts.
