Method
 

Preparation
  1. In a large bowl, beat together the softened butter and brown sugar until light and fluffy, about 3 minutes.
  2. Add the egg and vanilla extract, and mix until smooth.
  3. In a separate bowl, whisk together flour, baking soda, ground cinnamon, and salt.
  4. Gradually add the dry mixture to the wet mixture until a dough forms.
  5. In a shallow dish, combine granulated sugar and ground cinnamon.
  6. Scoop dough into 1.5-inch balls and roll them in the cinnamon sugar, if desired. Chill the dough for at least 30 minutes.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Place dough balls on a parchment-lined baking sheet, spaced 2 inches apart.
  3. Bake for 10-12 minutes until the edges are golden brown.
  4. Cool on the baking sheet for 5 minutes before moving them to a wire rack.

Notes

Serve warm with a splash of milk, or pair with vanilla ice cream for a delightful treat. Store cookies in an airtight container for up to one week at room temperature, or in the fridge for up to two weeks, or freeze for up to three months. Reheat in the microwave for a few seconds for a fresh-baked taste.
