  • 3 ripe bananas 3 ripe bananas, mashed The more speckles, the better for sweetness.
  • 1/2 cup 1/2 cup unsalted butter, browned Melt over low heat until it turns golden brown.
  • 1/2 cup 1/2 cup brown sugar
  • 1/4 cup 1/4 cup granulated sugar
  • 1 large 1 large egg Can be substituted with flaxseed meal or applesauce for a vegan option.
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 teaspoon 1 teaspoon baking soda
  • 1/4 teaspoon 1/4 teaspoon salt
  • 1 1/2 cups 1 1/2 cups all-purpose flour
  • 1 cup 1 cup chocolate chips Dark chocolate can be used for added flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the mashed bananas and browned butter, mixing well.
  3. Add the brown sugar and granulated sugar, and mix until combined.
  4. Stir in the egg and vanilla extract.
  5. In another bowl, whisk together the baking soda, salt, and flour.
  6. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  7. Fold in the chocolate chips.
  8. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with honey or butter on top. Pair with vanilla ice cream or whipped cream for an extra treat. Store at room temperature for up to 3 days or in the fridge for about a week.
