Main Ingredients
  • 1/2 pound ground breakfast sausage Cook until browned and crumbled.
  • 6 large eggs (beaten) Scramble until just set.
  • 8 slices Colby-Jack cheese Layer in the sandwich.
  • 4 tablespoons soft butter Divided for cooking.
  • 8 slices sourdough bread Butter one side of each slice.

  1. In a non-stick skillet, cook the ground sausage over medium heat until browned and crumbled. Drain excess fat and set aside.
  2. In the same skillet, melt 2 tablespoons of butter and scramble the beaten eggs until just set.
  3. Combine the cooked sausage and scrambled eggs in a mixing bowl.
  4. Butter one side of each sourdough slice. Place one slice butter-side down in the skillet; layer with cheese, egg-sausage mix, and more cheese. Top with another slice of bread (butter-side up).
  5. Grill on medium heat until golden brown on both sides, about 3-4 minutes per side.
  6. Serve immediately for a delicious breakfast experience.

Notes

Serve warm with a side of juicy tomato slices and a sprinkle of fresh herbs. For reheating, pop in a skillet to regain that crispy crust.
