Ingredients
  

For the Cobbler
  • 12 tablespoons unsalted butter, divided
  • 1.5 cups granulated sugar, divided (plus 2 tablespoons for sprinkling on top)
  • 2 teaspoons lemon zest
  • 3 cups blueberries Fresh or frozen (toss in flour before adding if frozen)
  • 1.5 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.75 teaspoons salt
  • 1.5 cups milk Plant-based milk can be used for a vegan option
  • 1 teaspoon vanilla

Method
 

Preparation
  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Place 4 tablespoons of butter into a 9 x 13 pan.
  3. Melt the butter in the oven while it preheats. Once melted, remove the pan and set aside.
  4. Brown the remaining butter in a pan until it’s golden and nutty.
Mixing
  1. Make the blueberry filling by mixing 1 cup of sugar, lemon zest, and blueberries together.
  2. Prepare the batter by whisking flour, baking powder, salt, milk, vanilla, and browned butter until smooth.
Baking
  1. Pour the batter over the melted butter, then spoon the blueberry mixture on top.
  2. Bake for around 45 minutes until golden.

Notes

Serve warm for the best flavor. Consider adding vanilla ice cream or whipped cream on top for a delicious combination.
