Ingredients
  

Main Ingredients
  • 3 pieces ripe bananas Use overripe bananas for the best sweetness.
  • 1 cup blueberries (fresh or frozen) If using frozen blueberries, don't thaw them.
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 piece egg Can be substituted with flaxseed meal or applesauce for a vegan version.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 1/2 cups all-purpose flour Can be substituted with whole wheat or oat flour.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  3. Mix in the sugar, egg, and vanilla extract until well combined.
  4. Sprinkle in the baking soda and salt, and mix it up.
  5. Add the flour and stir until just combined. Be careful not to overmix!
  6. Gently fold in the blueberries.
  7. Pour the batter into a greased loaf pan.
Baking
  1. Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  2. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with a dollop of butter, drizzle of honey, or scoop of ice cream.
