  • 2 cups almond milk (or any milk of choice)
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup Greek yogurt
  • 1/4 cup maple syrup (or honey)
Flavorings
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the rolled oats, almond milk, Greek yogurt, maple syrup, vanilla extract, baking powder, salt, and cinnamon. Mix well until everything is combined.
  3. Gently fold in the blueberries.
  4. Pour the mixture into a greased baking dish.
Baking
  1. Bake for 30-35 minutes until the top is golden and the oatmeal is set.
  2. Let it cool slightly, then serve warm. Optionally, top with additional blueberries or nuts before serving.

Notes

This baked oatmeal recipe is easy to customize. Use frozen blueberries if fresh ones aren’t in season. Swap maple syrup for agave nectar for a different flavor. Don’t skip the cinnamon, as it adds a warm sweetness that enhances the dish.
