Ingredients
  

Filling
  • 2 cups fresh blackberries Choose ripe berries for best flavor.
  • 1/2 cup sugar Set aside for mixing with blackberries.
Batter
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk Can substitute with plant-based milk.
  • 1/2 cup unsalted butter, melted Coconut oil can be used as a substitute.
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar Additional sugar for batter.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine blackberries with 1/2 cup of sugar and set aside.
  3. In another bowl, whisk together flour, baking powder, salt, and the remaining sugar.
  4. Stir in milk, melted butter, and vanilla extract until well combined.
Baking
  1. Pour the batter into a greased baking dish and top with the blackberries.
  2. Bake for 45-50 minutes or until it’s golden brown and bubbly.
  3. Let cool slightly before serving.

Notes

Serve warm with ice cream or drizzle with honey or sprinkle with cinnamon for added flavor. Store leftovers in the fridge for up to 3-4 days, or freeze for 2-3 months.
