Preparation
- Preheat oven to 350 degrees.
- Using a food processor, pulse about 10-12 graham cracker sheets until they resemble crumbs.
- Add in sugar, vanilla extract, and melted butter; pulse until well-combined.
- Pour the graham cracker mixture into your baking dish, pressing it into the bottom and up the sides. Set aside.
Making the Filling
- With a hand mixer or stand mixer, beat cream cheese on low speed for about 5-10 seconds.
- Add granulated sugar slowly while mixing on low, scraping the sides as needed. Add vanilla extract and mix until combined.
- Add the eggs, one at a time, mixing thoroughly after each addition. Scrape the bowl's sides and mix until silky smooth.
Baking
- Pour the cheesecake batter over the graham cracker crust and spread evenly.
- Bake for 22-25 minutes; the center should jiggle slightly when the baking dish is gently moved.
- Turn off the oven, crack the door, and let the cheesecake cool slowly for 45-60 minutes.
- Cool on the counter until it reaches room temperature.
- Chill in the fridge for at least 4 hours, or overnight for best results.

- Cut and enjoy with your favorite toppings. Refrigerate leftovers.
