  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
Wet Ingredients
  • 1 cup milk Can be substituted with plant-based milk for vegan option.
  • 2 large eggs Can be substituted with flaxseed meal or applesauce for vegan option.
  • 1/4 cup vegetable oil
Optional Ingredients
  • 1 cup diced bell peppers For added flavor.
  • 1/2 cup chopped green onions For added flavor.
  • 1 cup corn kernels Fresh or frozen.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Grease a 9-inch round cake pan or cast iron skillet.
  2. In a large mixing bowl, combine cornmeal, flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the milk, eggs, and vegetable oil.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. If using, fold in the bell peppers, green onions, and corn kernels.
  6. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake in the preheated oven for about 20-25 minutes or until golden brown and a toothpick comes out clean.
  2. Let cool slightly before slicing and serving.

Notes

For extra moisture, add sour cream or Greek yogurt. For spice, add diced jalapeños. Use buttermilk for richer flavor. Cool before slicing to prevent crumbling.
