Shrimp and Sauce
  • 1 lb shrimp, peeled and deveined
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce
  • Salt and pepper to taste
Vegetables and Serving
  • 1 cup mixed veggies (e.g., bell peppers, carrots, broccoli)
  • Cooked rice or quinoa to serve

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the sauce. Set aside.
  3. Coat the shrimp in olive oil, season with salt and pepper, then dredge in panko breadcrumbs until fully coated.
Cooking
  1. Place the shrimp on a baking sheet and bake for 10-12 minutes until crispy.
  2. In a separate pan, sauté mixed veggies until tender.
Serving
  1. Serve the crispy shrimp over cooked rice or quinoa, topped with sautéed veggies and drizzled with the Bang Bang sauce.

Notes

For extra crunch, consider pan-frying the shrimp instead of baking. You can use any veggies you have on hand, such as zucchini or snap peas. Allow leftovers to cool before storing.
