  • 3 pieces ripe bananas The darker, the better for sweetness.
  • 1/3 cup melted butter Coconut oil can be used for a vegan option.
  • 1 cup sugar
  • 1 piece egg, beaten Flaxseed meal can be substituted for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts Pecans can be used as a substitute.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the sugar, beaten egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and mix in well.
  6. Add the flour and stir until just incorporated.
  7. Fold in the chopped walnuts.
  8. Pour the batter into the greased loaf pan.
Baking
  1. Bake for 60–65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

For serving, spread with butter or cream cheese, pair with ice cream, or enjoy with coffee. Store in the fridge for 1 week or freeze for up to 3 months.
