  • 2 pieces ripe bananas (mashed) The riper, the better for maximum sweetness.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (softened) Softened for easy mixing.
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional) Can be replaced with chocolate chips or dried fruit.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Add in the mashed bananas, egg, and vanilla extract. Mix until well combined.
  4. In another bowl, combine the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Optional: fold in nuts.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let cool on a wire rack and enjoy!

Notes

For a fun variation, try adding peanut butter or cinnamon to the batter. Store cookies in an airtight container for up to 5 days, or freeze for up to 3 months.
