  • 4 pieces ripe bananas, sliced Use overly ripe bananas for better sweetness.
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats Adds texture and chewiness.
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk Can substitute with regular milk mixed with vinegar or lemon juice.
  • 1 teaspoon vanilla extract
  • to taste Whipped cream or ice cream for serving Choose your favorite topping.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, toss sliced bananas with brown sugar and set aside.
  3. In another bowl, combine flour, oats, baking powder, baking soda, and salt.
  4. Stir in melted butter, buttermilk, and vanilla extract until well blended.
  5. Pour the banana mixture into a greased baking dish, then pour the batter right over the top.
Baking
  1. Bake for 30-35 minutes, or until golden brown and firm to the touch.
  2. Serve warm, topped with whipped cream or a scoop of ice cream.

Notes

Leftover banana cobbler can be stored in the fridge for 3-4 days. It can also be frozen wrapped tightly for 2-3 months.
