  • 3 pieces ripe bananas, mashed The riper the bananas, the more flavor.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon
Streusel Topping
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/3 cup melted butter Use this for streusel topping.
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, combine melted butter with the mashed bananas.
  3. Mix in baking soda and salt.
  4. Stir in sugar, egg, and vanilla extract.
  5. Add in flour and rolled oats until just incorporated.
  6. Pour the batter into the prepared loaf pan.
Streusel Preparation
  1. For the streusel topping, combine brown sugar, flour, oats, and cinnamon in a bowl and mix with melted butter until crumbly.
  2. Sprinkle the streusel over the top of the batter in the pan.
Baking
  1. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

To enhance flavor, try adding chocolate chips or nuts. The bread can be stored at room temperature for up to 3-4 days, in the refrigerator for about a week, or frozen for up to 3 months.
